Put a big pot of water to boil for the pasta.
In another pot or large saucepan melt the
margarine and sautee the onion and mushrooms until
soft
Sprinkle the flour and stir in.
Pour in the milk and stir like you are making a
white sauce until it thickens slightly .
Put salt in the boiling water and put in the pasta
and cook until al dente do not over cook.
Preheat oven to 190C
Drain the pasta and mix with the mushroom sauce
,add the tuna,peas,mustard ,1 cup of the cheese
and season well .
Put in a greased casserole or deep oven dish.
Sprinkle the crushed potato crisps and the cheese.
Cook until bubbling and the topping is crispy and
golden.
You can vary the recipe and use other vegetables
like broccoli ,carrots or sweet corn. And make the
same recipe and substitute chopped ham or pancetta
or cured chicken or turkey for the tuna .
