- Grease and line a loaf tin. Melt the butter, sugar and vanilla extract in a saucepan over a medium heat.
- When butter has completely melted, remove from the heat and add the mashed bananas, mix well.
- Add the egg, mix well. Stir in the flour and milk.
- Pour mixture into the prepared tin, sprinkle with the Demerara sugar. Bake in the oven at 170C/150F/Gas 3 for 35 minutes or until a skewer inserted into the middle comes out clean.
