In a large saucepan heat some oil then fry the
sliced onions add the curry and fry ubtil onions
are soft .
Turn off heat and layer the potatoes over the
fried onions ,sprinkle some salt & pepper and some
garlic over each layer.
Pour the water or you can use stock as well over
the poatoes ,cover cook until it starts to boil
then simmer and check when potatoes are almost
done take off heat .
Put the potatoes & onion in an oven dish,sprinkle
top with some salt & pepper and put in a preheated
200C oven until potatoes get crispy.
If you wish you can omit the curry and use other
spices or herbs , I sometimes sprinkle dill or
caraway or fennel seed over it .
I find cooking it this way makes it tastier than
par boiling the potatoes and bakes faster than
roasting raw potatoes.
