I cook this fish in a foil packet so it remains
moist and just open the foil package for the last
5 minutes so it gets golden brown. I cook it in a
convection oven but can also be cooked in a normal
oven then uncover so it gets a nice golden colour,
I line a dish with foil enough so it overlaps,cut
onions in rings or sliced thinly,sweet green
peppers or a mixture of red & yellow sweet peppers
in thin slices,a chili pepper de seeded and
sliced,tomato thinly sliced,season with salt and
freshly ground pepper, ground cumin chopped mint &
parsley and grated lemon rind. You can also add
some black or green olives. Some olive oil. Then
prepare fish which is cleaned rub with salt inside
lemon juice,crushed garlic & cumin,black pepper. I
score the fish diagonally,lay it over the onion &
pepper mix,drizzle some olive oil, seasoning,lemon
juice and chopped parsley. Wrap the foil over the
fish like a package and cook for 30 mins depending
how big the fish are .
