Quick & easy carrot cake-Mix 250g self raising
flour,2 tspn cinnamon,400g caster sugar,350ml veg
oil,4 eggs then mix in 350g grated carrots & 120g
chopped walnuts. Pour batter in 2 23cm round cake
tins if you wish to sandwich it with cream icing.
Preheated oven gas mark 4 or 150C for about 25
mins. Cream cheese icing- Beat til 225g cream
cheese (ex. philadelphia etc) with 110g soft
margerine,then add 450g icing sugar and 1/2 tspn
vanilla.Stir in the nuts and use it to sandwich
the cakes together and spread on top,decorate with
walnut halves
