1-1/2 cups fresh cilantro, lightly chopped (plus extra for garnish)
1/2 tsp. black pepper
dash of sugar
1 cup white rice OR black quinoa
Instructions
1) Rinse chosen grain and cook accordingly in a rice-cooker - set aside
to cook on its own while you make the chickpeas.
2) Saute onion and garlic in a bit of oil in a large skillet on medium-
heat for 1 min.
3) Add soy sauce, all dry spices, as well as 2 tbsp. water. Stir-fry
briefly, then add chickpeas and stir-fry for 5 minutes, or until
chickpeas are hot.
4) Remove from heat and add in remaining ingredients. Serve atop the
rice or quinoa, then garnish with a bit of fresh cilantro.
