Cut chicken into 48 thin slices, 1 inch wide and 2 1/2 inches long. Pound chicken gently with back of knife to tenderize.

Thorughly mix liquid ingredients, salt, and sugar. Add chicken. Marinate 30 minutes.

|
On each square of paper or foil, arrange a sprig of cilantro or onion green and two pieces of chicken. Wrap and fold like an envelope and tuck in ends.

|
Deep fry chicken for 3 minutes, a few pieces at a time. Turn frequently with chopsticks. Drain on paper towel. Serve hot or cold.
