1. Sprinkle chicken with cayenne and brown in oil.
Brown sausage and combine. Remove from heat and set
aside.
2. In a frying pan, cook onion, pepper, celery and
garlic and cook for 4 minutes.
3. Transfer to large pot and add thyme, rice,
tomatoes and juice. Stir in fish stock, water and
bay leaf.
4. Add chicken and sausage mixture to pot and simmer
for 15 minutes. Add shrimp and cook for 15 minutes.
Add onion. Continue cooking til rice is tender and
meat is done.
