It’s best to roast seeds within a day or two of carving the pumpkin.
Heat oven to 350 degrees. Grind rosemary in a spice grinder, or chop very fine; combine with seeds, oil, and salt. Spread on a baking sheet. Bake 10 to 12 minutes, or until crisp and brown. Makes 2 cups.
Variation
Make sweet seeds with 4 tablespoons (1/2 stick) melted butter, 4 tablespoons brown sugar, 1 teaspoon ground cinnamon, 1/2 teaspoon nutmeg, and 1/2 teaspoon ground ginger.
