Scrub the potatoes and boil them until very tender about one hour. Drain. When cool enough to handle, peel potatoes and place them in a large bowl of a mixer.
Add butter, milk, sugar, nutmeg, vanilla and eggs. Beat until smooth.
Heat oven to 375F.
Pour filling into pie shells and bake until crust are golden brown. 30-35 minutes.
