3 lbs. boneless, skinless, chicken breast - cut to 12 pieces of even thickness
2T olive oil
1 - 2 tsp. salt, to taste
1 tsp. pepper
Instructions
Drizzle chicken with oil and sprinkle with salt and pepper to cover all surfaces of chicken.
Place in even layer on rimmed baking sheets or roasting pans and roast @ 400F for 15 min. Turn
off heat and let sit in residual oven heat 5 min. Check to be sure cooked all the way through.
