2 lb. frozen veggies--your choice--California Medley is good
3 cans fat-free chicken broth
1 can Rotel tomatoes--it’s up to you how spicy you want it!
10 oz. light Velveeta
Instructions
Dump the first four ingredients in the pot and bring to a boil. Let simmer for 45 minutes. Add Velveeta. When it is melted, you’re ready to eat. You don’t even need crackers with this.
Note- Some people like one serving over a baked potato.
