3 pkg. frozen chopped spinach, thawed and squeezed
½ lb. bacon, fried and crumbled
6 hard boiled eggs (chop 3—slice 3)
½ to ¾ pkg. (small) Pepperidge Farm cornbread stuffing
1 onion, minced
Dressing-
1 c. sugar (or less)
2 tsp. celery seed
2 tsp. salt
2 Tbs. Dijon mustard
1 tsp. pepper
2/3 c. vegetable oil
2/3 c. vinegar
Instructions
Mix together spinach, bacon, stuffing, 3 chopped eggs, and onion. Whisk dressing together and pour over salad; garnish with 3 sliced eggs. Enjoy. Still very good the next day.
