1 3/4 cup flour
1 cup dark brown sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 tsp pumpkin pie spice
1 cup pumpkin puree
1/4 cup unsweetened applesauce
1/4 cup vegetable oil
3 tbsp maple syrup
3 tbsp water
1/4 cup walnuts, chopped
1/4 cup pepitas, plus extra for sprinkling on top

1) Preheat oven to 350F, and grease and flour a loaf pan
2) In a large bowl, combine dry ingredients, including the sugar and excluding the walnuts/pepitas. In a smaller bowl, combine wet ingredients.
3) Add wet to the dry and stir until just combined, then fold in walnuts and pepitas. Pour into prepared loaf pan and sprinkle top with extra pepitas.
4) Bake for 60 minutes, or until a toothpick can be inserted into the middle of the loaf and come out clean. Let cool in the pan for 20 additional minutes, then transfer to a cooling rack.
