Preheat oven to 350 degrees. Saute onions, celery, bell pepper in butter. Remove from heat. In a 2 qt bowl, mix crawfish, parsley, green onions, eggs, breadcrumbs, salt and cayenne pepper. Stir into onion mixture. Shape into 24 oblong boulettes. Place on baking sheet and bake 20-25 minutes. Set aside until ready to add to bisque. ( see recipe for Crawfish bisque)
