Combine 2 cup water,
3cup caster sugar, 250g butter and sifted 1/3 cup
cocoa and 1tsp bic.soda in a saucepan and stir on
low heat until sugar dissolves, bring to boil and
simmer 5min.
Cool to room temp.
When cooled add 3cup self raising and 4 eggs
beaten to the chocolate mix and beat till colour
gets pale. Bake in a 26x33 dish bottom covered
with baking paper at 180deg for 50min. Cool on a
rack.
Fudge
Combine 90g butter, 1/3 cup water, 1/2 cup caster
sugar in a saucepan and stir over heat til sugar
dissolves. Sift 1 and 1/2 icing sugar with 1/3cup
cocoa into a bowl then gradually stir I. The hot
butter mixture. Cover and refrigerate for 20min.
Beat with spoon till spreadable.
