Dice zucchini, pepper and onion then saute in large sauce pan or dutch oven with olive oil until zucchini is tender.

Dice chicken breast and saute pieces in separate pan until cooked through with a drizzle of olive oil while veggies cook. During cooking, add salt and pepper if desired.

Add chicken to the veggies and pour in marinara to desired consistency. I use about a half jar to keep it chunky.

|
Heat until comes to a simmer then serve over brown rice.
*Brown rice takes a while to cook so I simmer the chicken and veggies until it is done but you can get the rice going first and serve as soon as sauce is heated through.
