Tenderize chicken breasts between plastic wrap. They should be about 1/2 inch thick. Heat oil in large sauté pan over medium-high heat. Season chicken breasts with salt and add to pan. Cook about 3 minutes each side. Transfer chicken to serving dish.
Increase heat to high, add butter, lemon juice, and pepper to pan. Whisking constantly, cook sauce until well blended (about 1 minute). Salt to taste. Pour over chicken.
