Rinse rice in strainer under cold running water for 30 seconds.

Bring 12 cups water to a boil in a large pot with a tight fitting lid
over high heat. Add rice. Stir once. Boil uncovered for 30
minutes.

Pour rice in strainer over sink. Let drain for 10 seconds. Return
to pot. Cover and set aside to allow rice to steam for 10
minutes.

|
Uncover, fluff with fork, and season to taste with salt.
