Combine first 6 ingredients until smooth. Starting at the thiner side of the breast open up with a sharp knife to resemble a book. Spread 1/4 of the cheese mixture on 1 half of each breast. Pin closed with toothpick or skewer.

In a small bowl whisk together oil cumin paprika salt and pepper. brush all over chicken.

Place on greased grill over med high heat. Close lid and grill turning once until golden brown and chicken is no longer pink. about 16 min. 327 cal 2 carb.

I have done in oven and also like to add sun dried tomatoes and switch out the spices for basil ad oregano........few hot chili flakes.
