In Stock pot simmer. Garlic, Ginger, Lemongrass and Kaffir Leaves
for 1/2 hour. Strain out stalks and peels. Add chicken for 5 min till
cooked. Add mushrooms and cook for 5 more minutes. Add
Coconut Milk, Lime Juice,Fish sauce and Curry Paste or Thai chilies.
simmer for 20 minutes. Add red onion. and sprinkle with Cilantro
before serving.
