Put oranges in a big pot of water after washing
them and boil for 1 1/2 hours. Drain and allow to
cool, then puree.( you puree the oranges skin and
all. usually I cut them in halves to take the pits
out) I usually do this the night before.Beat the
eggs and caster sugar until well combined. Stir in
the orange puree followed by the almond meal and
baking powder. Pour the batter into a prepared tin
and dust the top with some extra caster sugar.
Bake roughly for about 1 hour until the top is
golden and a skewer inserted into the centre comes
out clean. Oven should be 160%. Allow to cool then
dust with icing sugar.
