Beat eggs until fluffy. Add sugars to eggs, and beat until thick and creamy. Add oil and vanilla to eggs/sugar mix and blend in. Combine Dry Ingredients, then add to wet mixture. Fold in zucchini and walnuts. Bake at 350 for 50-60 minutes (loaf pans work best). If you use mini-loaf pans, then 45 minutes is usually long enough.
