Preheat oven to 375.
Place spinach in a large class bowl and microwave
for 3 minutes. Stirring every minute or so. Stir in
sour cream, cheese, and garlic.
Place chicken on a clean surface and spoon spinach
mixture onto each one. Roll up chicken to enclose
the spinach, the wrap each breast with two slices
of bacon. Secure with toothpicks.
Back uncovered for 35 minutes, then broil for 5-10
minutes longer to brown the bacon.
NOTE- I have made this using only one slice of
bacon per chicken breast and it turned out great.
