6 lbs Red Kidney Beans
|
|
10 lbs Smoked Sausage
|
|
6 Onions-chop
|
|
4 Bell Peppers-chop
|
|
1 Bunch Celery-chop
|
|
Garlic powder (to taste) or 10-12 garlic cloves, chop
|
|
Salt-to taste
|
|
Pepper-prefer to use Tony Chacheres- to taste
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Soak beans overnight.
Drain beans, fill with fresh water, to cover.
Bring to boil, add chopped veggies and garlic.
|

|
Brown sausage, under broiler.
Reduce heat of beans to medium, cook until tender,
2 hrs.
|
|
|
Add sausage and continue cooking, 2 more hours,
cooking down until thickened.
You may smash a portion of the beans to help
thicken sauce.

|
Near end of cook time, add salt and Tony
Chacheres.
Slice meat and Serve over Cooked white rice.
