1 1/2 cups self raising flour /
1 cup cocoa /
1/2 tsp baking powder /
1/2 tsp salt /
150g butter /
2 cups granulated sugar /
4 eggs
2 cups semi-sweet chocolate chips /
1 box AFTER EIGHT chocolates, unwrapped(OR 2 Bars AERO Mint Chocolate crumbled)
Coat baking pan with non-stick cooking spray. Combine flour, cocoa, baking powder and salt in small bowl. Beat butter, sugar and eggs in large mixing bowl until creamy. Gradually beat in flour mixture. Stir in chips.
Pour half the batter into greased baking pan, spreading evenly with spatula or butter knife. Individually unwrap AFTER EIGHT mints and layer side by side evenly over top surface of batter. OR MIX IN AERO CRUMBLED CHOCS ....Using a spatula or butter knife, carefully spread the remaining batter on top of the mint layer, covering completely.
Bake for 30 to 35 minutes, or until wooden pick inserted in centre comes out slightly sticky. Cool completely - cut into squares or leave as a cake and cover with choc ganache
