1/3 c. parmesan cheese (plus about 1/4 c. for topping)
1 c. mozzarella, divided
1 c. grape tomatoes, halved
1 bunch fresh basil, cut into ribbons
1/2 teaspoon crushed red pepper (optional)
Salt to taste
Pepper to taste
Instructions
Preheat oven to 350 degrees. Spray a 9X9 casserole dish with nonstick cooking spray.
Heat tomato sauce in a microwave safe bowl, about a minute. Once warm, stir in milk, parmesan, and seasonings. Stir. Stir mixture into the quinoa. Fold in half the mozzarella and half the tomatoes, then most of the chopped basil. (Reserve some for the topping.)
Pour mixture into the prepared casserole dish. Top with mozzarella, tomatoes, basil, and garnish with basil.
Bake for 15 to 20 minutes, and then broil for 1 to 2 minutes until cheese is golden and bubbly.

Suggestions
If you need to also go lactose free, you can use lactose free milk and cheese...or omit the cheese. Serve with a side salad for a wonderful meal.
