2 tbsp olive oil
|
|
1 medium onion, chopped
|
|
1 lbs boneless, skinless chicken (cut into bite sized pieces)

1/2 tsp salt and pepper
|
|
1 cup uncooked rice
|
|
2 cups chicken broth
|
|
1 can rotel
|
|
1 can enchilada sauce
|
|
1 cup frozen corn kernels
|
|
|
|
2 tsp chili powder
|
|
1 tsp cumin
|
|
1 can black beans
|
|
1 cup Mexican blend cheese
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Add oil to skillet and heat on high for 1 minute. Add onion,
chicken, salt and pepper. Cook for 5 minutes.

Add rice. Cook/stir for 4-5 minutes. Chicken and rice should get
golden brown.

|
Add chicken broth, rotel, enchilada sauce, corn, chili powder, and
cumin. Stir and bring to boil. Reduce to simmer, cover and cook
20 minutes.

|
Add black beans, top with cheese. Cover and let sit for 5 minutes.
Then serve.
