Put the onion and chicken pieces with the
chicken stock in a pan. Put some water and
sprinkle some oil. Let it simmer for some time
till the onion and chicken change colour and a
bit tender. Add the carrots, eggplant cubes,
green pepper, spices, pepper, seasoning and
wine. Let it simmer, add the polpa, sugar and
tomatoes paste. Cover and leave it till the
vegetables are soft. Meanwhile boil pasta and
when ready drain the pasta and add it to the
chicken sauce. Buon apetit. Serve it with
grated cheese --)
