Preheat oven to 450 degrees F. Place oven rack in
middle position. Place 1 inch iron skillet in the
oven until hot and sizzling. Prepare batter while
pan is heating.
In a blender, blend the eggs until light and
frothy; add milk, flour, vanilla, and cinnamon;
blend for 3-5 minutes more. The batter will be
very thin, but very smooth and creamy.
Add the butter to the hot skillet, tilting the pan
to melt the butter and coat the skillet. Pour the
batter into the hot skillet, all at once.
Bake approximately 20 to 25 minutes or until
puffed and golden brown.To serve, sprinkle with
powdered sugar and lemon juice.
