Sometimes I marinate thinly sliced beef then stir fry
and chill
Can add dijon mustard, lemon juice, honey
Instructions
Cook asparagus in a small amount of water until crisp-tender, about 3
to 4 minutes; drain and rinse with cold water. Place in a large bowl;
add the tomatoes, mushrooms and green pepper. In a small bowl,
combine remaining ingredients; mix well. Can add dijon, lemon juice
or honey also.
Pour over vegetable mixture; toss to coat. Add beef if desired. I
save some asparagus tips to put on the top.
Cover and refrigerate for 2 hours or overnight.
