Microwave spinach 2 1/2 minutes on high. Drain excess liquid. Line 12 cups with foil baking cups. Spray each with cooking spray. Combine egg substitute and the rest of the ingredients (including spinach). Mix well.
Divide evenly among the muffin cups. Bake at 340 degrees for 20 minutes until a knife inserted in the center comes out clean.
It can be frozen and reheated in the microwave. Any combo of appropriate veggies and reduced fat cheese can be used.
