You can use can tomatoes in a pinch but romas are the best
4-5 romas diced
(mini food processor for the following:
1 small vidalia onion or any other sweet onion
1 small green pepper
2-3 cloves of garlic
1 good handful of fresh cilantro-
try to avoid as much stem as poss.)
1 heaping T of cumin
1 T lime juice
1 can corn drained
1 can black beans drained and rinsed
as much jalapenos, habenero or red pepper
flake for the heat you want.
