Pare zucchini, wash and slice lengthwise. Remove the seeds and slice like apples. Add a little water and bring to a boil in a large saucepan. Simmer for 15 minutes or until tender. Cool and drain well. Add the rest of the ingredients and place into an unbaked 9 inch crust. Cover with the other pie crust, flute to seal the edges. Cut slits into the top of the crust for steam to escape. Bake at 350 degrees for 45-60 minutes.
