Beat cream cheese and butter at medium speed until creamy.
Gradually add sugar and beat until light and fluffy. Add eggs
one at a time, beating just until yellow disappears.
Add sweet potatoes and beat well. Combine flour, baking
powder, baking soda, salt and cinnamon/nutmeg; gradually add
to sweet potato mixture, beating on low speed after each
addition. Add vanilla.
Spoon into greased and floured 10-inch (12-cup) tube pan and
bake at 350 for 1 hour and 5 to 10 minutes, or until a wooden
toothpick inserted in center comes out clean. Cool in pan on a
wire rack for 10 minutes. Turn out onto wire rack and cool
completely for 1 hour.
For loaves, pour into 2 greased and floured loaf pans and bake
as directed
