Preheat oven to 375 degrees. Combine first 5
ingredients in a bowl. Soak the bread in this
batter until it is fully absorbed. Preheat a
large pan with butter to medium high heat and
throw in the bread slices just until they are
browned on both sides.
Remove the bread and add the Canadian bacon to
the pan and slightly toast it.
On a foil-lined baking sheet, build the
sandwiches--lay down a piece of bread and then
cheddar cheese, Canadian bacon, and harvarti
cheese. Bake in oven for 20 minutes. In the
meantime, poach the eggs.
Once ready, top each sandwich with two poached
eggs and sprinkle with diced chives and
cayenne.
