Heat the almond milk in a saucepan for 1-2 minutes, then add the banana and vanilla. Try to make sure any chunks of banana are mashed down.
Once things have started to mix, add the cinnamon, peanut butter and honey to the saucepan.
Mix your dry ingredients in a separate bowl.
Pour contents in the saucepan over your dry ingredients and stir quickly until mixed thoroughly.
Line baking sheet with parchment paper and put mixture onto the baking sheet. Flatten out well.
Place in fridge and chill overnight.
Peel off parchment paper and cut into 8 equal bars.
