|
slice eggplant thinly and coat both sides with salt. Let sit in
colandar for 30 minutes or so to drain. Dry the slices.

dip eggplant slices in egg. Then coat each side in
breadcrumbs. Bake in 450 oven for 6 minutes each side.

|
mix the c ingredients together and top eggplant slices evenly
with mixture. Reduce oven heat to 350 and bake for 20
minutes or so
|
