Bring to simmer and reduce heat. Do not bring to
a boil. Add the greens, which may be piled high in
the skillet as they shrink while cooking.Simmer
for an hour to an hour 30 mins. Add more seasoning
if needed. Add hot sauce or vinegar if desired.
Add fresh tomatoed and/or red peppers if desired.
