Toss berries (slice strawberries), 2 TBS soda, and MINT leaves in bowl, set aside for 10 minutes. Combine ricotta, rest of soda, lemon zest and whip with mixer till fluffy. Stir in sour cream.

Divide berries into 4 bowls and top with cream = 1 pt each.
