Preheat oven to 375 degrees. Unsheathe sausages
by making a longitudinal superficial incision
and pulling out the meat, discarding the
sheath. Mix in Italian herbs. Stuff each
peppadew with pork but do not overstuff.
Drizzle with olive oil and place in a foil-
lined pan and cook for 20 minutes. When done,
transfer to serving platter and sprinkle with
parsley.
