Beat eggs, sour cream, water, & pepper until fluffy. Melt butter in pan and cook eggs over low heat. Stir in cheese.
Prepare biscuits. Cook sausage, cut into pieces & set aside. Add flour to pan over medium heat. Slowly add milk, whisk until thick. Season with pepper, add sausage. Place biscuits open face on plate, top with gravy.
