Coat pan with nonstick spray, scramble egg whites over medium
heat for 3 minutes and set aside.
Recoat with the pan non-stick spray and brown chicken pieces.
While chicken is browning, prepare the rice according to the
directions written on the box.
Add the frozen vegetables and continue to cook for 5 minutes.
Stir in rice and soy sauce. Mix together thoroughly.
Add in the cooked egg whites. Mix and serve hot!
