1/2 of a 6 oz can of tomato paste, mixed with 1/2 cup water
cinnamon, nutmeg and pepper to taste
8 eggs, separated
3/4 cup grated parmesean cheese
Instructions
Heat milk and 1 1/2 teaspoons salt just to boiling. In a 1 quart heavy pan, melt 1/2 cup plus 1 Tablespoon butter and slowly stir in flour to make a smooth paste. Add hot milk slowly, stirring rapidly with a whisk. Cook over low flame, whisking constantly until smooth. Set aside to cool.
Boil macaroni in large pot of salted boiling water until tender but firm. Drain and set aside.
Sautee onions in 1/2 cup melted butter until soft (about 10 minutes). Add ground meat and cinnamon stick. Cook until meat is no longer pink, about 10 minutes. Drain fat. Add tomato-paste mixture, stirring well. Add a dash of cinnamon and nutmeg. Season with salt and pepper to taste. Cook slowly until meat has absorbed most of the liquid, about 15 minutes. Remove from heat. Remove cinnamon stick and discard. Add macaroni to meat mixture, blending well. Beat 6 egg whites with 2 egg yolks and slowly add to meat-macaroni mixture. Blend well. Mix in 1/2 cup of grated cheese.

Melt 1/4 cup of butter and cook until it turns golden brown. Add to meat-and-cheese mixture. Spread mixture in an 11 inch by 16 inch, 2 inch high baking pan. Sprinkle the top with the remaining grated cheese and a little cinnamon.
Beat 6 egg yolks (4 remaining plus 2 more) in a large bowl. Slowly add cooled white sauce. Beat until smooth. Spread sauce evenly over macaroni mixture. Bake in a 375-degree oven until golden brown, about 50 to 60 minutes. Let stand before serving.
