Melt the dark chocolate in the top of a double boiler set over simmering water, stirring until smooth, or microwave it in a dry microwave-safe bowl, uncovered, on medium power for 1 to 3 minutes, stirring every 30 seconds, until melted. Melt the white chocolate separately, following the same directions.

Using a spatula spread all of the melted white chocolate evenly over the bubble wrap, bubble side up. Chill for 5 minutes in the fridge or until set. Spread the melted dark chocolate overtop, covering the white chocolate completely. Refrigerate for 15 minutes or until firm. Gently peel off the bubble wrap and break the chocolate into chunks. Store the Chocolate Bubble in an airtight container in the refrigerator for up to a month.
