Spray large skillet with cooking spray. Add chicken; cook and stir on
medium-high heat 2 minutes or until no longer pink.
Stir in water. Bring to boil. Add rice. Reduce heat to low; cover.
Cook 10 minutes.
Add all remaining ingredients except onions; mix well. Cook until
cheese is completely melted, stirring occasionally. Sprinkle with
onions.
