3 obs skinless, boneless, chicken breast, cut into small pieces
3/4 cup olive oil
3 onions, finely diced
9 cloves garlic, minced
2 red bell bell peppers, diced
2 yellow bell peppers, diced
4 green bell peppers, diced
1 TBsp chili powder
1 TBsp ground cumin
1 TBsp dried oregano
4 cups chicken broth
3 can white kidney beans (cannellini beans)
2 cans black beans
1 small can diced green chiles (4 oz)
1 small can diced jalapenos (4 oz)
season salt
Instructions
In a large stock pot, saute chicken, olive oil onion, garlic, and bell peppers until vegetable start to soften. Add season salt to taste. Add chili powder, cumin and oregano. Cook on medium for about 3 minutes. Add chicken broth, beans and chilies and continue to cook on medium/low for 5 to 10 minutes. Thicken broth with a little cornstarch mixed with a little water or potato pearls.
