Combine the sugar, butter, cream cheese, salt, almond and vanilla extracts and egg yolk. Beat until smooth. Stir in flour until well blended. Chill the dough for 8 hours or overnight.
Roll one-third of the dough at a time to 1/8 inch thickness, refrigerating remaining dough until ready to use. Cut into desired shapes with lightly floured cookie cutters. Place 1 inch apart, ungreased sheets, or lined with parchment.
375 Bake 7-10 mns until edges begin to brown. Cool on racks before frosting.
Frosting - Mix all ingredients except food coloring until smooth, Divide frosting and tint each portion as desired. Spread on cooled cookies or pip the frosting with a pastry bag.
