1 Shallot (chopped)
|
|
2 Large Potatoes (yukon gold) peeled and chopped

4 cups Low Sodium Chicken Broth
|
|
2 cups Arugula
|
|
Handful-Big
|
|
1/4 cup Cream (any kind will do)
|
|
Season
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Heat olive oil in pot on stove, season with salt and pepper
Simmer ingredients together for 20 minuites
|
|
|
Add lettuce to broth, add cream, season with salt and pepper
|
|
|
Turn off heat- puree with hand blender
-add chesse on top (optional)
|
