2 Packages Shredded Cheese, Mexican or Taco Variety
12-18 Manicotti Noodles, Cooked Al Dente
Instructions
Preheat oven to 400. Thoroughly brown turkey, make sure you are using a pan with some extra space. Once turkey is completely cooked, stir in fajita seasoning and chilis, stir thoroughly. Add cream cheese. Stir until cream cheese is completely melted. This can take awhile.
Add 1/3 can black beans, 1/3 of your tomato and peppers, and 1/3 of the olives. Stir to combine. Let cool to handling temp.
Once cool, use clean fingers, or a teaspoon to stuff manicotti noodles. Pour Picante sauce in bottom of baking dish, coat thoroughly. Lay stuffed noodles on top.
Once all noodles are stuffed, coat with entire bottle of taco sauce. Sprinkle all remaining veggies on top of the sauce, and cover the top with cheese. Cook 30-45 minutes, with tinfoil over top.

Suggestions
Serve piping hot with beer or milk. Deep fried tortillas make a good addition.
